It is very interesting to say that, no oil is used to cooking of dishes in Nagaland. Meat, rice and chilies are the mains food of Nagaland. The Naga tribes are also used to have to eat dog meat. They are also pork, chicken, mutton, fish and vegetables, Meats are often smoked over open wood fires which is really amazing flavour, one can interested to having of such a delicious food, smoking of pork meat is very testy with a glass of or two of Zutho, the local rice beer which is attracted the travelller. The mains ingredient in many Naga recipes is bamboo shoot. A shi Aon, the chiken pieces basted in lard and steamed in bamboo shoot extracts, another dishes are Mule-hi, a spicy sesame sauce, which is flovoured with basil and ginger. Another interesting dish are Rosep Aon, which is better combination of bitter gourd, broad beans along with brinjal cooked in chilly paste and fermented bamboo shoot extract. Nagaland is home of the world’s hottest chillies. Bamboo shoots are used generously in Naga cooking. Meats are smoked over wood fires which to give it a distinct flavour.
During the Hornbill Festival, many traditional dishes has been cooked, and is used make traditional rice beer which is main attraction of domestic tourist as well as foreign tourist also.Pichatu Hafu Li,it is a yam stem in Naga dal is very tasty.
Smoked pork meats are cooked along with bamboo shoots which is good flavour. They are like to eat beef also. During festival, they all together and used to taste different dishes and enjoy eating’s.
